Did I say I love improvising?
Well, here is another improvisation of mine. It is called rice with whatever you have at home. It can be pure vegan or if combined with small fried chicken cubes, become a satisfactory meal for dinner. It is really easy to prepare, and tastes so delightful and light! Trust me it will be gone in 15 minutes, at least that is the case in my family!
As I said, the ingredients in this dish are dictated by the content of the refrigerator, rather than a strict recipe to be followed. The most important here is the technique. Fry vegetables a bit, cook rice separately in microwave, mix them, season, and add soy sauce. But if you need a recipe, continue reading.
To serve 3:
1 cup rice (Thai rice)
2 medium-sized carrots
1/4 small white cabbage
150 gr. white mushrooms
100 gr. canned corn
1 1/2 tbsp. olive oil
3 tbsp. soy sauce (not very thick one)
Salt
Black and Red Pepper
Ginger powder
Garlic powder
Boil rice in microwave or on stove. For microwave, add 1 and 1/3 cup of water to 1 cup of rice. To make it tasty, cook it in any vegetable broth instead of water for 15 minutes. It takes around 20 minutes when cooked on stove and you need 2 cups of water to 1 cup of rice.
Note: Do not overcook rice, you will be frying it with vegetables later. Do not add oil or butter!
Heat the WOK or a big pan. When it becomes really hot add 1 tbsp of olive oil. Keep the heat really high. Add carrots and fry for 2 minutes, then add cabbage and mushrooms, fry for 3-4 minutes. Add ginger, garlic powder and peppers. Mix well and constantly.
Now transfer rice to vegetables. Sorry for a bad photo :)
Mix well and constantly: rice can otherwise stick to the pan . Fry for 1-2 minutes. Add corn and mix again. You can put fire down to medium now. Now add soy sauce and continue to mix and cook for 1-2 minutes. Here you go, it is ready to serve! It is great, when served with fresh green onions! If you like them of course!
Best recipe for rice and vegetabes ever! I was proud of the way I cook my rice until now. This was completely different and way healthier (I cooked all vegies for a minute or two only). Looking forward to more recipes, Arus.
