Dot cake and spring!


On a sunny day as this one, I always feel like sitting in an open-air cafe, reading a book or a magazine, and enjoying a cup of American coffee. Well, would the day be perfect without a piece of a cake...to sweeten the flavor of fresh air and still chilly wind. Of course not. Nevertheless, it is only March, and open-air cafes are still closed, so I have to take care of my own cake and coffee.


Hope you too see the sun today! If the weather forecast promises you a sunny day tomorrow as well, you could sacrifice some 30 minutes of today's sun, to prepare something sweet and to meet tomorrow with a joyful piece of a cake. Does it worth trying?

To make a small cake for 4:
200 gr. simple cookies (like юбилейные)
100 gr. crashed walnuts
80 gr. unsalted butter
200 gr. curd
1 banana
1/3 cup sugar
1 egg
100 gr. chocolate
30 gr. whipping cream

Crush cookies into crumbs, they should be the same size as walnuts (almost powder texture). Mix with 50 gr. of softened butter. Take a small pie plate or a pan (I use a simple pan that does not have a plastic handle). Put a folio to cover both the bottom and sides of the pan. Place cookie mixture in the pan and push hard to form an even, flat crust. Make sure to create some boarders from cookies on the sides. Place in preheated oven at 180 C for 3 minutes.

Whisk sugar with the egg. Add curd and 2/3 of banana. Continue to whisk until you get almost smooth texture, similar to cream.

Remove the crust after 3 minutes, pour in the curd mixture and place back to the oven for 10 more minutes. Make sure to check on the cake, it might take less or more time. The cake is ready when curd becomes firmer. Remove, let it chill while you prepare the ganache.

Bring whipping cream to boil. Remove from fire and place chocolate pieces and butter in the mixture, mix well.
Let it cool for 10 minutes, cover the cake with ganache. Decorate with the remaining banana slices or with white chocolate dots.
