Christmas cookies in spring


...This cookies are perfect for children. They do not contain ginger or eggs. They are simple and safe food even for babies  from 7 mo on (of course without frosting). Make them in forms of flowers, and you will have spring cookies!


Dough:
200 gr. butter
200 gr. sour cream
200 gr. sugar
2 cups white flour
1 teaspoon of soda
1 tablespoon of vinegar

Put out the butter to soften or heat it in microwave, so that it becomes soft enough to mix well with sugar. On a big spoon mix soda and vinegar (you can use baking soda instead of this mixture), mix soda and vinegar with sour cream and add to butter and sugar mixture. Mix in flour.  

Let the dough rest at room temperature for 10-15 minutes. Roll the dough to form 3-4 cm thick layer. Using  forms of cutting cut out figures. Bake at 180-200 C for 15 minutes or until pinkish-brown. 

Put cookies out to chill. When they will harden when becoming room temperature. 

Frosting:

Heat 1 bar of white chocolate (100 gr) over steam or just melt in a pot with a bit of water. When fully melted, take of the heat and mix in food color. Make sure to add  food color gradually: drop by drop. Mix well after adding each drop.  Be careful not to overdo. I add color with a toothpick.

Decorate cookies quickly, before the frosting hardens. 

Let cookies dry for 2-3 hours or overnight. 

Cookies can be kept in a refrigerator for around a month.
