Broccoli soup

A friend of mine, Iza, once posted a link to a simple broccoli soup on Facebook. It was just a cream-soup out of boiled broccolis, water, and salt! It was served with goat cheese and olive oil.

I adjusted the recipe, to make it more tasteful and here is what I got. And trust me, its yummy!



To serve 2:

400 gr. broccoli
100 gr. pumpkin
50 gr. green peas (fresh or frozen, not canned) (optional)
Salt
Black pepper
Blue cheese
Croutons*

Boil water in a bowl, add salt and vegetables to the boiling water. Cover the lead and let to boil for 7-10 minutes, or until vegetables are cooked. Drain the water but preserve it. Add 1/3 of it back to vegetables and blend in a blender. If the soup is thick add more of the remaining broth. Add salt and pepper.

Cut blue cheese in slices, place on the bottom of the serving plate, pour in the cream soup. Serve with croutons.

*For croutons:
 10 slices of white bread
 20 gr. butter
 20 ml. olive oil
 Garlic

Cut white bread slices to small cubes. Heat a pan, add 20 gr. butter and olive oil, smash the garlic with knife (do not cut it) and put it in the butter, let it fry a bit. It gives butter its taste.  Put the bread squares on the pan and fry, constantly mixing. Even if they are soft when fried, it is ok. Put them aside for some 10 minutes and when chilled they will become crispy.Do not forget to remove the garlic clove.
