People are divided to those who love sweets, those who are neutral to sweets, and those who do not like sweets. I belong to group 1: those who cannot live without sweets. There was a time, I had to eat third of a chocolate bar every morning to realize that I am awake. Finally, I am over that habit, but still, I continue to consume sweets constantly. So to control my weight, I try not to bake, because when I know that there is something sweet in the house - I eat it! On the other hand, that is selfish, don't you think? So sweets are occasion and demand driven in our house, you ask you get it!
Recently, my husband asked for something sweet, and here is what he got...dough-less Meringue cake.
For meringues:
4 egg whites
1 cup of sugar or sugar powder
a pinch of salt
For topping:
1 banana
1/2 cup of cut walnuts
200 gr butter
1 can of condensed milk
1 tbspoon of brandy
Meringues
Using a mixer, beat egg whites until they turn into a thick white mass that leaves trail when beating. When thickened, continuing to whisk, gradually (a spoon at a time) adding sugar. Continue to beat at a medium-high speed for 2-3 more minutes.
Line a cookie sheet with parchment or brown paper. Using a spoon place spoon-full portions of the mixture on the cookie sheet 4-5 cm apart. Bake in the oven at a low heat, around 90-100 C until pink. Switch the light in the oven to check on meringues. DO NOT OPEN THE OVEN WHILE BAKING! IT WILL RUIN MERINGUES! It takes around 40 minutes to bake. Switch the oven off and leave meringues in the oven for 10 more minutes.
Topping
Make sure the butter is soft, before whisking. Whisk butter until it becomes fluffy and white. Continuing to whisk, gradually add the condensed milk and brandy. Add nuts to the topping and mix well with a spoon. Slice banana.
Cover chilled meringues with cream and place one layer on a plate, put some banana slices on top. Continue covering and placing meringues in layers, like bricks (putting bananas between the layers). You should get a pyramid from meringues. Coat the pyramid with some topping and decorate it with banana and nuts.
